I really love StoryBird, an online digital storybook creator. It has the most beautiful art gallery to inspire your student's writing. The only tricky part is students need to create an account with an email that can receive a confirmation email. So... you may need to enlist the help of parents or use student gmail accounts (or similar) for the students to register.
After the account is activated, you can start by just reading storybirds that have been already been created by others HERE. OR jump in a create your own HERE using art, the monthly challenge or a themes as your inspiration.
Here is one I created using the artwork from the site as inspiration:
What a Feeling! on Storybird
Another great site to use with students to create digital storybooks is little bird tales. This site has a simple sign up process with no confirmation email (it says there is supposed to be one, but I never got it) so it is easy to use quickly with students. I also really love that they don't have ads or merchandising on the site. It doesn't have the extensive art gallery that Storybird does, but it does allow the author to draw and/or upload their own pictures. I think my favorite feature has to be the ability to add your own voice and narrate the story! How cool is that for your students? The story can then be shared by emailing the link from the public library.
Here is cute story narrated by a Kindergarten class:
